Our specialty: is honey process with prolonged anaerobic fermentation, and the process is developed with the following parameters:
The process begins with the selection harvest of only the ripe cherry, which we carry out with trained and well-paid pickers because it is a manual technical task, trying to keep the embryo healthy within the cherry.
Once this process is completed, it is taken to the collection center where we perform floatation and manual selection of the beans.
After this, it is placed in hermetic containers, and we proceed to carry out prolonged anaerobic fermentation.
Then, it is removed and taken to the de-pulper, and subsequently, it is taken to the Exotic drying center where it is turned every 2 hours, avoiding high temperatures until it reaches a humidity level between 10% and 12%, which is achieved in approximately 15 days depending on the climate.
There is coffee, and there is the smooth finish of Colombian Premium lingering delightfully.
