Grown at a serene altitude of 1700 meters, our Castillo variety offers a cup that's both comforting and vibrant. From the moment you bring it to your nose, you'll be greeted by an inviting aroma that whispers of sweet honey, creamy vanilla, and rich chocolate – a truly delightful prelude.
The first taste is like a warm embrace, with the rustic sweetness of panela (unrefined cane sugar) perfectly balanced by the bright, juicy notes of mandarin orange and the classic zest of orange. A clean, citric acidity enlivens the palate, leading to a refreshing and lingering aftertaste that echoes the same bright, citric juiciness.

PROCESS:
Semi-washed – a method that falls between the "washed" and "natural" processes, where the coffee cherry is de-pulped but some of the sticky mucilage (the sugary layer beneath the skin) is left on the beans before drying. The mucilage, which dries and darkens, gives the beans a honey-like appearance and flavor profile, hence the name.
